Spelt and Cottage Cheese Buns

First of all yes I didn’t make a mistake with the title – the recipe is about spelt and cottage cheese buns. Second of all you’re going to love it.


Have you ever wondered how to make quick little buns that are healthy and take up 30 minutes in total? Well here we go, I have a perfect recipe! My friend (hello Katja!) gave me this recipe probably somewhere last year and I have been baking these babies like crazy.

They need 20 minutes to bake and 5 minutes to prepare the batter! Quite good ha? So you can use your excess time for things like reading a book, enjoying a coffee and doing yoga (not scrolling on instagram and watching all those amazing food posts ha? – guilty I know).

I think the secret ingredient here is cottage cheese or quark as it gives a nice fluffy soft texture!

Spelt and Cottage Cheese buns / Healthy, Simple, Clean

Ingredients: makes 6 buns

  • 250g of spelt flour
  • 250g of cottage cheese or quark (I used this)
  • 1 egg
  • 1 bag of baking powder
  • pinch of salt

Heat your oven to 220 degrees Celsius (420 F). Prepare your baking dish and line it with parchment paper (I ran out of it when I was baking this weekend so I just used aluminum foil – works good). Mix the dry ingredients – flour, baking powder, a bit of salt and mix separately  cottage cheese and egg. Mix well so there is no big chunks of cheese. Put the wet into dry or is it dry into wet? Doesn’t matter just mix the two batters and now use your pretty hands that you washed beforehand. Dig in and form a nice ball. Place it on you counter which you sprinkled with a bit of flour and form a nice long “baguette”. Divide the baguette into approximately 6 buns and place them on the baking dish. Form them as you like and press generously with a knife a cross or a single line figure so they will look amazing when baked. I coated them with a tiny bit of olive oil and put them in the oven for 20 minutes.


They are done! Take them out, wait to cool of, maybe cover them with a cloth so they will be soft and enjoy them when ready. They are best eaten when they are fresh or on the second, third day. They will be still ok on the forth but then just put them in a toaster or something so they get a crispy feeling.


Idea how to eat them best? Top them with Peanut butter and banana! Explosion of flavors I say.
