Thank you Chocolatecoveredkatie (really you don’t know her blog? – stop everything you’re doing and click), for sharing her recipe for Chocolate Chip Cookies – healthy edition of course! No sugar, no eggs, no weird ingredients! And they are really, really yummy!
Of course I had to accustom the recipe – wups but please take a look of the original!
The recipe makes about 8 cookies and I had them for dessert after lunch – without any guilt!
So let’s stop babbling and cut to the chase…
Ingredients: make 8 bigger cookies
- 1/3 C almond flour + ¼ C almond flour (65-70g) (you can probably use leftover pulp from making almond milk – have to try that out!)
- pinch of salt
- ¼ tsp of baking soda
- 1 scoop of vanilla whey
- 2-5 TBS of crushed dark chocolate (I used around 30g of 85% Vivani dark chocolate)
- 3 TBS of Cream Cheese (50g – for Slovenian friends: I used MU light)
- 1 TBS of melted coconut oil
Mix your dry ingredients and separately mix cream cheese and coconut oil. If the cream cheese and coconut oil doesn’t melt good just slowly put it on the stove and mix so everything melts. Put the wet into the dry and stir together. It will look crumbly and weird but have patience and stir!
Take out a plate and put parchement paper over it. Form your cookies and place them on the paper. Put everything in the freezer for at least 30 minutes but they can also be in there for a longer period of time. Take them out when you want to bake them.
Put them directly into the oven that was previously heated on 160 Degrees Celsius (325 F) for 8 minutes. Take them out – they will seem underdone but trust me and take them out and leave them for at least 10 minutes outside – do not touch them!
After 10-15 minutes you can attack! They are a bliss!
