It’s that day of the year, when every store is prepped with hearts, dressed in red and just screaming out loud at you that you must buy something.
Some people really ‘hate’ Valentines day, because it is just another marketing thing, when people just buy things because they are somehow obliged.
I get and agree with the opinion that you can show your love everyday of the year and you don’t need a Valentines day to do that, but really, please who doesn’t love some special caring from a loving person or a friend and showing some affection? Then why not multiply that on Valentines Day?
Anyhow I fit in the group of people that yeah, don’t really make big of a deal on Valentines day and I don’t rush to the store to buy something but that doesn’t mean I can’t play with my recipes and make everything fit for this day.
I gathered some quick recipes for todays or any other day’s breakfasts, snacks or desserts that would bring a smile on anyone’s face really.
I got the recipe inspo and idea from Blogilates and I just slightly changed some things.
Ingredients: per serving
For the cake:
- 40g of oat flour
- ½ scoop of vanilla protein powder
- 2 TBS of yogurt (you can substitute the whey powder and yogurt with 2 TBS of greek yogurt and a drop of vanilla extract)
- 2 TBS of milk
- 1 egg
- ½ banana
- ½ tsp of baking powder
For the filling: freeze in a silicone muffin cup (for at least 30 minutes of overnight) 1 TBS of greek yogurt or normal yogurt + 1 tsp of cocoa and 1 tsp of peanut butter
You’ll need some fruit for decoration.
Mix all dry ingredients and add wet for the mug cake. Coat your bowl or mug with a bit of coconut oil and add the mixture. In the middle push a frozen mixture of yogurt/PB/cocoa. Put it in the microwave for around 1-2 minutes – check so it won’t rise too much. That is it. Transfer to a plate and decorate pretty.
Mini heart shaped pancakes:
These are a perfect little treat for your breakfast.
- 30g of oats
- 1 scoop of vanilla whey protein powder
- 1 egg
- 1 TBS of chia seeds
- 2 tsp of flax seeds
- a bit of water
Toppings: ½ banana, coconut flakes, dark melted chocolate – your imagination.
Blend all the ingredients together and transfer the mixture to a bigger pan. When the bubbles start to form slowly and carefully flip it over. Wait until it’s done. Transfer to a plate, take your heart shaped cookie cutter or sth similar and cut out little hearts. Decorate your plate with your mini pancakes, banana, melt a dark chocolate and drizzle your pancakes with it. You can even make a heart / banana sandwich with them.
Heart shaped brownies
Last year I made these chocolate brownies that are refined sugar free, dairy free and almost gluten free. You can find the recipe at Fablunch website, that has amazing other recipes as well. There’s also a video explaining how to do them. They are amazing!
